Wine Grape Pomace Flour
Summary
Grape pomace is the solid remains of fresh grapes after pressing or fermenting. Rich in fiber and antioxidants—both of which are very sought-after biocomponents for their well-known health benefits—grace pomace lowers blood pressure, blood sugar level while fasting, and insulin resistance. It also protects plasma and tissue from oxidative damage.
Potential Use
WGPF can be a useful ingredient for producing new functional foods aimed at preventing and controlling chronic diseases such as cardiovascular disease and diabetes. It can also be added to various food stocks such as bread, cookies, cakes, processed meat and cold cuts, dairy products, etc.
Advantages
WGPF has two advantages: 1) it significantly reduces acrylamide without affecting the appearance or flavor of the final product; 2) it can be used in small quantities as an enzyme for this process.
Development Status
WGPF is protected under a trade secret license granted to “Harinas y Productos de Bagazo de Uva Chile SpA,” a company founded by entrepreneur Ángel Valenzuela.
